Grandma Kelly's Cornbread Dressing:
I make it every year. Just follow the recipe on Aunt Jemima white corn meal mix for cornbread. No sugar and use buttermilk. Fix cornbread in iron skillet. I make a large bunch.
I make two pones of cornbread.
Crumble cornbread
2 eggs
2C chopped celery
2 C onion
Add enough broth to moisten (I chop up the giblets and add them) salt, pepper, sage, red pepper. Mix it all up. I put mine in a crock pot or roaster and cook about an hour or so.
Just use your judgement on eggs, celery, onion according to how much you make.
Mom used a lot of red pepper. Jerry says I don't add enough.
Mom always made two pans - one with lots of red pepper and one with just a little.
I start out with little seasonings and keep adding until I think it is right, (according how much you make)
